Eat single and be lean this summer with a fresh single food ingredient salad!
Salads can be a great meal for lunch or dinner as long as you don’t kill it with dressing. Many times people start off with a healthy salad, but by the time they add a ton of cheese, salad dressing and cover it in croutons they have a much less healthy meal. Actually, one that is very high in fat. So the key to a healthy salad is choosing single food ingredients that include protein, carbohydrate, some healthy fat and lots of color with vegetables.
Let’s breakdown “The Single Food Salad” ingredients…Vegetables are high in vitamins, minerals and antioxidants that help fight disease so load your salad full of colorful veggies…lots of flavor and fiber for very little calories. To this salad, we will add 3 oz of a boneless, skinless grilled chicken breast and one hard boiled egg white for protein. Next let’s add some carbohydrate with ½ a green apple and a ¼ cup corn. Finally, top the salad with 2 Tbs. chopped pecans and ¼ avocado to garnish with healthy fat. Need a dressing…try balsamic vinaigrette, put it on the side and dip your fork. Tasty, filling and delicious is this single food salad!
“Single Food Salad” Recipe
•4 cups romaine lettuce
•½ tomato
•½ cup raw broccoli
•3 oz boneless, skinless grilled chicken
•1 hard-boiled egg white
•½ green apple
•¼ cup corn
•2 Tbs. chopped pecans
•¼ medium avocado
